Meath Cuisine: Fourth recipe card available

Meath Cuisine is a collection of recipes from 10 of the top chefs from the best restaurants that County Meath has to offer. Last week featured our third recipe card with Franzini's, Trim publishing their head chef Lee Clarkes recipe card.

This week Eden Restaurant in Bellinter House, Navan has published their recipe card with head chef Francoise Herpin serving up her popular dinner party choices of the following:

Starter-serves 2

Wild mushrooms, asparagus and parmesan salad with poached egg and truffle oil

Main-serves 2

Pan fried cod fillet, roasted figs with balsamic vinegar, pancetta and rocket salad

Dessert-serves 6

Chocolate mousse & hazelnut chocolate shortbread
